I never blog about my cooking, even though it is a big part of my life. I’m a vegetarian and I like to cook as natural and local as possible. That being said, the following recipe for breakfast muffins contains some exotic ingredients like banana, raw cacao nibs and coconut oil. I buy these in bulk to lessen the environmental impact. But still, it’s one of my little sins and it’s no use hiding them. Nobody’s perfect. 🙂

I take the train a lot. And the nice thing about trains is that you can relax, read a book and have a meal! When I travel in the morning, I like to take these baked oats breakfast muffins with me. I experimented a lot and this vegan recipe has become my favourite.

Hazelnut and cacao baked oats muffins

  • 2,5 cup oats
  • 1 cup hazelnut-almondmilk (I use the Lima brand)
  • 1 mashed banana
  • 2 table spoons maple syrup
  • 2 table spoons melted coconut oil
  • 2 table spoons flax seed
  • 2 table spoons raw cacao nibs
  • 1 table spoon hazelnutbutter
  • 2 table spoons hazelnuts
  • 1 table spoon sunflower seeds
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon cassie cinnamonpowder

Mix it all up, put in a muffin tin (I make 8 big muffins with this recipe). Bake for 25 minutes on 180°C (356 Fahrenheit).
